Ingredient:

  • 2 ½ Cups Einkorn flour
  • ½ Cup Vanilla Spice Pure Protein Powder
  • ¾ cup Monk sugar
  • ½ teaspoon salt
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 cup pumpkin or sweet potato puree
  • 3 large eggs
  • ½ cup extra virgin olive oil
  • ½ teaspoon Vanilla Extract
  • 4 drops Cinnamon Vitality Essential oil
  • 2 toothpick swirls of Nutmeg Vitality Essential oil
  • 1 toothpick swirl of Ginger Vitality Essential oil
  • 1 toothpick swirl of Clove Vitality Essential oil

Directions:

  1. Preheat oven to 350°F.
  2. Oil & flour your loaf pan.
  3. Mix the Einkorn flour and salt together in a large bowl.
  4. Fill a ½ cup measuring cup with extra virgin olive oil. To the olive oil, add 4 drops Cinnamon Vitality Essential oil, 2 toothpick swirls of Nutmeg Vitality Essential oil, 1 toothpick swirl of Ginger Vitality Essential oil & 1 toothpick swirl of Clove Vitality Essential oil. Set aside for later
  5. In a separate large bowl beat the 3 large room temperature eggs until light and airy, they will also lighten in color. About three minutes.
  6. Add your Monk Sugar and beat again until combined well.
  7. Add your pumpkin puree and oil mixture and beat again for another 3 minutes. Everything should be looking quite fluffy right now.
  8. OK, it’s time to add your flour. Remember with quick breads it’s crucial to not over beat them. So add your flour but mixed JUST until everything is combined.
  9. Pour it into your loaf pan and bake for 50 minutes.
  10. Let it cool for 10 minutes THEN remove it from the pan and put it onto a cooling rack, let it completely cool before eating it with your favorite spread!

Tips & Tricks

  • You can sub out the einkorn wheat & use 2½ cups fine almond flour.
  • You can use any sugar; I like to use Monk Sugar. Taste just like sugar, but it is a zero on the glycemic index. Safe for everyone children, diabetic & perfectly healthy.
  • You can add chopped nuts to the batter before you dump it into the loaf pan or simply add them to the top & bake per directions.
  • You can switch the cup of pumpkin & use bananas for a yummy Vanilla Spiced Banana Bread.
  • You can switch out the cup of pumpkin for 1 cup of drained grated zucchini for a delish zucchini bread!!
